Gluten-free Chicken Banh Mi
Gluten-free Chicken Banh Mi is all about contrast in one good bite. You get crisp bread, tender chicken, tangy pickled vegetables, cool cucumber, fresh herbs, and a creamy spread that brings everything together.
This Low-FODMAP-friendly version keeps the sandwich bright and satisfying while making practical swaps for gluten-free and lactose-free needs. Certified gluten-free rolls, lactose-free or dairy-free spread, scallion green tops, and gluten-free tamari help keep the recipe more flexible without making it feel stripped down.
Build it for lunch, serve it as a casual dinner, or set out the fillings so everyone can make their own. The pickles do the heavy lifting, so the final sandwich tastes fresh, crunchy, savory, and worth the extra little prep.
Ingredients
For the Quick Pickled Vegetables
- 2 medium carrots, peeled and cut into thin matchsticks
- 1 cup daikon radish, peeled and cut into thin matchsticks
- 1 cup hot water
- 1/3 cup rice vinegar
- 1 1/2 tablespoons granulated sugar
- 1 1/2 teaspoons kosher salt
For the Chicken
- 3 cups cooked shredded chicken breast or plain rotisserie-style chicken
- 1 tablespoon gluten-free tamari
- 1 tablespoon fresh lime juice
- 1 teaspoon garlic-infused olive oil
- 1/4 teaspoon black pepper
For the Sandwiches
- 4 certified gluten-free crusty rolls or baguette-style rolls
- 2 tablespoons lactose-free butter or dairy-free spread, softened
- 4 tablespoons garlic-free mayonnaise
- 2 tablespoons garlic- and onion-free chicken liver pâté, optional and label-checked
- 1 cucumber, thinly sliced lengthwise
- 2 to 3 scallion green tops, cut into roll-length pieces
- 1 cup fresh cilantro sprigs
- 1 to 2 Thai red chillies, thinly sliced, optional
- Fresh lime wedges, for serving
Materials Needed
- Cutting board
- Sharp knife
- Measuring cups and spoons
- Medium bowl
- Small bowl
- Whisk or spoon
- Tongs
- Baking sheet, if crisping the rolls
- Parchment paper, if crisping the rolls
How to Make It
- Make the pickling liquid. In a medium bowl, stir the hot water, rice vinegar, sugar, and salt until the sugar and salt dissolve.
- Pickle the vegetables. Add the carrot and daikon matchsticks to the bowl and press them into the liquid. Let them sit for about 2 hours, then drain well before using.
- Season the chicken. In a separate bowl, toss the shredded chicken with gluten-free tamari, lime juice, garlic-infused oil, and black pepper. Set aside while you prepare the rolls.
- Crisp the rolls, if needed. If your gluten-free rolls need a little texture, warm them in a 350°F oven for 5 to 7 minutes. Let them cool just enough to handle.
- Prepare the spreads. Split each roll lengthwise without cutting all the way through. Spread lactose-free butter or dairy-free spread on the top side, then spread garlic-free mayonnaise on the bottom side.
- Add optional pâté. If using pâté, spread a thin layer over the mayonnaise. Make sure it is label-checked for garlic, onion, gluten, and dairy before adding it.
- Layer the chicken. Add the seasoned shredded chicken to each roll. Use enough to fill the sandwich, but leave room for the vegetables and herbs.
- Finish with fresh toppings. Add drained pickled carrot and daikon, cucumber slices, scallion green tops, cilantro, and chilli if using. Serve right away with lime wedges.
Low-FODMAP Notes
Traditional banh mi often includes wheat bread, dairy butter, and sauces or spreads that may contain garlic, onion, gluten, or dairy. This version uses certified gluten-free rolls, lactose-free or dairy-free spread, gluten-free tamari, garlic-infused oil, and scallion green tops to make the sandwich more Low-FODMAP-friendly.
Choose plain cooked chicken or check the label carefully if using store-bought chicken. Garlic powder, onion powder, wheat-based sauces, and dairy ingredients can show up in prepared chicken, mayonnaise, and pâté.
The pâté is optional because many versions include garlic, onion, gluten, or dairy. If you cannot find a suitable option, leave it out and use a little extra garlic-free mayonnaise for creaminess.
