Salmon and Avocado Summer Bites

Warmer days are coming, which means heavy, sluggish snacks are out and light, refreshing bites are in! These Salmon and Avocado Summer Bites are loaded with nutrients to fuel your workouts and keep your gut happy—no bloating, no regrets. Whether you’re crushing a morning run or just pretending you’ll hit the gym later, this low-FODMAP snack is the perfect way to prep for summer.

Ingredients:

For the Summer Rolls:

  • 8 rice paper wrappers
  • 4 oz cooked salmon, flaked
  • 1 ripe avocado, sliced
  • 1 cup shredded lettuce (butter lettuce or iceberg)
  • 1 small carrot, julienned
  • 1 small cucumber, julienned (seeds removed to keep it low-FODMAP)
  • 1 tablespoon fresh chives, chopped
  • 1 teaspoon sesame seeds (optional)

For the Dipping Sauce:

  • 2 tablespoons garlic-infused olive oil
  • 1 tablespoon tamari (gluten-free soy sauce)
  • 1 teaspoon maple syrup
  • 1 teaspoon lemon juice
  • 1 scoop Tomorrow's Nutrition Sunfiber

Instructions:

Step 1: Prepare the Ingredients

Flake the cooked salmon into bite-sized pieces. Slice the avocado and julienne the carrot and cucumber. Chop the fresh chives and set everything aside.

Step 2: Soften the Rice Paper

Fill a large, shallow dish with warm water. Dip one rice paper wrapper into the water for about 10-15 seconds until soft but not too sticky. Lay it flat on a clean, damp surface.

Step 3: Assemble the Rolls

Place a small amount of lettuce, salmon, avocado, carrot, and cucumber in the center of the wrapper. Sprinkle with chives and sesame seeds for extra flavor.

Fold the sides of the rice paper inward, then roll it up tightly like a burrito. Repeat with the remaining wrappers and ingredients.

Step 4: Make the Dipping Sauce

In a small bowl, whisk together the garlic-infused olive oil, tamari, maple syrup, and lemon juice. Adjust seasoning to taste.

Step 5: Serve & Enjoy

Arrange the summer rolls on a plate and serve with the dipping sauce for a refreshing, light, and gut-friendly meal.
