  • 1 cup cooked white rice total
  • 1 cup baby spinach or mixed greens
  • 1 small carrot, julienned
  • 1 small cucumber, sliced

  • Sesame seeds
  • Green onion (tops only), thinly sliced

How to Make It:

Prepare the glaze

  1. In a small bowl, whisk together the white miso paste, maple syrup, tamari, rice vinegar, and sesame oil until smooth.

Cook the salmon

  1. Preheat the oven to 400°F (205°C) and line a baking sheet with parchment paper, or heat a skillet over medium heat. Place the salmon on the sheet or skillet and brush generously with the miso glaze.

  2. Bake for 10 to 12 minutes or pan-sear for about 4 to 5 minutes per side, until the salmon is cooked through and flakes easily.

Build the bowls

  1. Divide the cooked rice between two bowls. Add spinach, carrot, and cucumber evenly.

  2. Place the salmon on top and finish with sesame seeds and green onion tops if using.
