Ingredients: (Serves 4)

For the Soup Base

  • 1 tablespoon garlic-infused olive oil
  • 1 medium carrot, finely diced
  • 2 celery stalks, finely diced
  • 1 pound boneless, skinless chicken thighs or chicken breasts
  • 6 cups low-FODMAP chicken broth, no onion or garlic
  • 1/2 cup uncooked white rice
  • 1 teaspoon salt, or to taste
  • 1/2 teaspoon black pepper

For the Lemon Egg Mixture

  • 2 large eggs total
  • 1/3 cup fresh lemon juice

Optional Garnish

  • Fresh dill or parsley

Tools you will need:

  • Large soup pot
  • Cutting board
  • Sharp knife
  • Medium mixing bowl
  • Whisk
  • Measuring cups and spoons
  • Ladle
  • Wooden spoon

How to Make It:

Build the soup base

  1. Heat the garlic-infused olive oil in a large soup pot over medium heat. Add the diced carrot and celery and cook for about 5 minutes until softened but not browned.

  2. Add the chicken, chicken broth, salt, and pepper. Bring to a gentle boil, then stir in the rice, reduce to a simmer, and cook for 15 to 18 minutes until the rice is tender and the chicken is fully cooked.

Shred the chicken

  1. Remove the chicken and place it on a cutting board. Shred it using two forks, then return it to the pot and lower the heat.

Make it creamy without dairy

  1. In a medium bowl, whisk the eggs and lemon juice until smooth. Slowly ladle about 1 cup of hot broth into the egg mixture while whisking constantly to temper the eggs.

  2. Slowly pour the egg mixture back into the pot while stirring gently. Keep the heat very low and cook for 2 to 3 minutes until the soup thickens slightly. Remove from heat and serve.

You do not need extreme cleanses or bland food to reset your gut after the holidays. This Greek Lemon Chicken Soup is comforting, nourishing, and supportive, without sacrificing flavor or satisfaction.

Make a pot this week and let your digestion settle while your body refuels. Save it, share it, and enjoy comfort food that truly works with you.
